Pão de Queijo

Brasil's best bite.

Crispy outside, stretchy and cheesy through the middle, and impossible to eat just one. Pão de queijo is the snack Brazilians grew up on, the thing that shows up at every table, every hour of the day, without needing an excuse. Made from cassava starch, naturally gluten free, and built for sharing. The traditional version is simple. These are not.

How to Prepare

Straight from the freezer. No thawing, no prep work, no dishes. Air fry 5 to 10 pieces at 350°F (175°C) for 15 minutes until golden. Oven works too. 400°F (200°C) for about 12 minutes.

"PIZZA"

Ham, oregano, tomato sauce. Tastes exactly like you think it does, but better. Order it before you question it.

Goiabada — guava paste pão de queijo

GUAVA

Sweet guava paste tucked in the center, warm and gooey through every bite. The Romeo and Juliet of pão de queijo.

Who's Mary

The person behind the pão.

I grew up in Missouri and ended up in Tampa the way most good things happen: not exactly planned, but exactly right. Eight years in fine dining taught me what it actually means to make someone feel welcome. That is where I found Thiago. His accent got my attention first, obviously, but his energy and his heart are what led me to marry him a few years later. He is Brazilian, and this food comes from his culture, his family, his home. When the version of my career I had built took a sudden turn, he knew it was the opportunity to build something new. He wasted no time on launching his startup. I watched that, and eventually started building too. Mary and Mais is mine, but it would not exist without him and without Brasil.

Growing up, I went to school with kids who looked like me, ate the same food as me, and listened to the same music as me. Now, my doctor is Colombian, my hairdresser is Puerto Rican, and my neighbors are Cuban. On weekends I sit in my backyard and listen to my neighbors laughing and singing in a language I'm still learning. I don't know all the words, but I sing anyway. I laugh. That feeling is exactly what I want to package up and hand you every Sunday.
